Flower Pot Muffins

Breakfast

I started the day with a bowl of vanilla yogurt, cranberry granola cereal, and a spoonful of Raspberry White Chocolate peanut butter.

Boston

While running errands, I passed the Boston marathon finish line.  When there was a break in the traffic, I ran across Boylston, crossing the finish line for the 2nd time.  Even though neither time was for the actual race, both were still exciting. :P

My #1 item to cross of my To Do list was to buy more contacts.  I wear 2 weeks disposable contacts, but I think I’d been wearing this last pair for almost 2 months.  Everyone has a few unhealthy habits, and remembering to change my contacts is something that I really need to improve.

Lunch

Lunch was a pesto turkey burger topped with cheese and broccoli florets and a side of baby carrots.

DVD Workout

I chose the cardio segment of the 10 Minute Bootcamp DVD for a post-meal workout.  Wow, it was a challenge and I was so happy when the 10 minutes were over.  I get pretty lazy when I work out at home, but even with my slacking off, my heart rate was still up for those 10 minutes.  :)   I’ll definitely try the other DVD segments for strength training and abs.

Dog Park

I took Miles to the dog park.  It was a risk; he’s not the friendliest corgi.  He managed to play alone for 5 minutes and then it was time to go.  One day he’ll be a social gentleman..  Baby steps!

South End, Boston

I love my South End neighborhood.

Snack

I snacked on a handful of trail mix.

Cooking dinner

I made sausage and wheat fusili pasta for dinner.  The organic wheat fusili package recommended serving the pasta more on the al dente side so I decided to follow the advice.

Dinner

Fusili, 1/2 chicken sausage, broccoli, and red sauce.

I don’t know if I was 100% on board with the al dente pasta.  I like mine on the softer side.  But overall, a tasty meal.  The chicken sausage was made with apples so it had a slightly sweet flavor.  Different than the typical sausage spice!

I got a little crazy in the kitchen and decided to BAKE.

Flower Pot Muffin

I made Flower Pot Muffins.

Nothing special.  No recipe.  I used a box of Duncan Hines blueberry muffin mix.

But there is one thing you need to know… ;)

The one and only secret is that the muffins were baked in clay pots.

Obviously not true flower pots because those have a hole in the bottom!

The apartment smelled great and now you know what I’ll be eating for breakfast for the rest of the week.  These muffins are my mom’s specialty so I thought of her the entire time I was baking…yup all 10 minutes of prep time and 25 minutes while they were in the oven. :lol:

Dessert

I had a small dish of ice cream for dessert.  I’m ready to crawl in bed and READ.

I’m not very tired since I didn’t have an overly exciting day, but I am craving a good book.  After reading Jenna’s post about her love of reading, I’ve been thinking about how much I really enjoy reading too.  After all, I was an English major in undergrad.

Just a few of my favorite books…

  • Little House on the Prairie  (Obsessed.  I thought I was Laura Ingalls for a while.)

  • Shutter Island
  • Harry Potter series
  • Wuthering Heights
  • Nineteen Minutes by Jodi Picoult
  • Berenstain Bears series (I looooved these books when I was little.)

    those muffins look delicious! when weber arrives, we’ll have doggy dates! i love little house on the praire + the bernstein bears. also, little women, anne of green gables and wuthering heights {such a favorite!}. plus who can forget the handmaid’s tale.

    I love the Little House on the Prairie series too! I still to this day look for the DVD’s every time I am in a store.I also love Nineteen Minutes by Jodi Picoult (ok everything by her pretty much) & the Harry Potter series.

    I also loved The Time Traveller’s Wife by Audrey Niffenegger & The Bronze Horseman, Tatiana & Alexander / The Bridge to the Holy Cross & The Summer Garden series by Paullina Simons.

    I love Bernstein Bears when I was little, too! I could never pick my favorite book right now. It’s like trying to pick a favorite movie or song!

    The Outsiders! Love the book and movie. Baby sitters club was also my shit.
    I’m the same way with contacts. I try to wear my glasses on cloudy days or on the weekends so I can extend the wear of the contacts.

    I love the idea of flowerpot cupcakes – so cute. :)

    I’m really into science fiction books and would have to say that my favorite book is 1984. I also really loved Animal, Vegetable, Miracle – naturally.

    What is this raspberry white chocolate peanut butter you speak of? Is it from PB & Co.?

    I was also an English major and I’m definitely a book lover. Nineteen Minutes is definitely one of my favorite Jodi Picoult books. My all-time favorite, however, is To Kill a Mockingbird.

    I am excited to have found another “meat eater” in the blog world to “borrow” recipes from. I have found oodles and oodles of veggie ideas on blogs lately but not a lot with meat. Also, I loved the pic of Miles all on his own at the dog park. My Corgi would not have any of that. She MUST go check out all of the other dogs (shes super social).

    Very delicious looking muffins – I love blueberry muffins!

    I also am not a fan of al dente pasta – I like my pasta with a little less bite.

    2 week contacts – I stretch mine to at least a month!

    I love “Love Story” what a great book!
