Tofu and Fettuccine

I snacked on a Clementine x2 before I went to the gym.

I’m glad so many of you commented that when you’re away from workouts, you start to miss exercise.  But that it’s ok (and sometimes necessary) to take gym breaks.

I hit the treadmill for 20 minutes of walking/running, used the foam roller, and then sat in the sauna for 10 minutes.  It was a light and easy workout, and a good way to ease back into exercise after a head cold.

I munched in a kiwi as soon as I got back from the gym.

I also unwrapped a little present.

And ate my last 2 pieces of my Lindt mint chocolate bar.

I had been planning on making tofu for dinner, but didn’t decide on the combo until I got home and looked at the contents of the cabinets/fridge.  I boiled water for fettuccine and heated the tofu with red sauce, some spices, and scallions.

Topped with some Parmesan cheese, this dinner was quite tasty.

I made dessert healthy by choosing a VitaBrownie with a small scoop of frozen cool whip.

    Love the tofu dish. Looks yummy. The choc looks good too and I love mint and choc, but I am allergic to mint so I do not eat it very often (I look funny with swollen lips and a puffy tongue!).

    love tofu and fetuccineeeee…i also forget how freakin good FROZEN cool whip is! it makes it like a whole new food prodcut when you freeze it!!

    mm, what a delicious looking dessert! I like the Vitabrownies heated up with ice cream :)

    I eat those Lindt 85% dark chocolates every night, about 100 calories worth. They always satisfy my chocolate craving.

    When I don’t workout for a while I really feel low and sort of gross. It’s like my body needs it! I don’t workout hard either, usually moderate workouts.

    I love Lindt mint! It’s my favorite flavor after the chili one. Do you eat the skin on your kiwi? I’ve always wondered what it tastes like but never been brave enough to try!

    I wish I missed going to the gym. I will admit that I always feel fantastic after I’ve done it and love the feeling of being fit and happy, but I dont necessarily miss the gym.
