I snacked on a Reese’s and an unpictured Clif bar this afternoon.

For dinner, I finished the rest of Tuesday’s batch of chicken by adding a few small pieces to my plate of cheese tortellini and mixed greens.

And seeing the world through rose colored glasses, Jared and I each had a glass of Rose with dinner.

Thanks for the feedback for my upcoming Vegetarian Challenge!

As soon as I published my last post, my cousin Becky told me that she’s going to follow my Vegetarian Challenge too.  It’s great to have a family that sticks together!  Becky and I will share recipes and discussion, once I finish my reading and watch Food, Inc.  Becky is also running the Willow Tree Half Marathon with me. We’re trying to coordinate some longer training runs, along with my Auntie Carol who’s also running with us.

I know it’s not very difficult to go without meat for just 5 days.

I’m calling this a challenge because I’m making extra work for myself.  I’m going to cook 3 vegetarian dinner recipes, but not repeating anything that I’ve cooked before.  I’m going to think of 5 vegetarian lunches rather than using dinner leftovers.  I’m pretty sure I’m going to try tempeh for the first time!  Normally I stick to cubed tofu, but I need to explore other options.  Maybe even making my own black bean burgers?

I’m also using the challenge to finally force myself to become educated about the food industry.  I’ve been able to plead ignorant when anyone discusses major issues.

The Vegetarian Challenge will be more difficult for Jared.  Anti-vegetables, he’ll be the one who will be interesting to read about!  Can he last 5 days without buffalo wings?  Maybe he should do a guest post?!? He’s already requested a meal at the Otherside Cafe.

    Very cool challenge! I went vegetarian for a few months or so during my senior year..or maybe junior don’t remember…but I never got too creative with it so I’m excited to see your meals!

    I’m excited about the challenge. I have some recipes up my sleeve…maybe we need to have a vegetarian dinner party?!

    Good luck with your challenge! Food, Inc was incredibly informative. You will definitely feel more informed about the food industry once you are finished with the book and your challenge week!

    Good luck with the challenge! I had a cheeseburger for dinner tonight at a place that uses grass fed beef so I think I’m doing my part while still getting to eat my meat:) Once you see Food Inc. you’ll see why grass fed beef is supposed to be much better! Good luck!!

    I forgot to add…I did see Food, Inc. and it haunts me every time I bite into a piece of meat. Maybe that’s why I am all about this veggie challenge?!

    I love your challenge idea! I pretty much eat vegetarian anyway, but I always end up making some chicken for Dave. I agree with Karissa, above. A post from Jared might help encourage the meat-only men out there to give it a try…even for a week.

    You’ll do great on your challenge! It’s honestly way easier than most people think. One veggie dish I love is making tempeh bolognese…just make a normal spaghetti sauce, but add crumbled browned tempeh instead of the meat. It’s got a great texture and flavor!     Seitan is another option too for veggie meat replacements. Good luck with the challenge. And yum on the PB heart.
