
I started to snack on TJ’s pomegranate Greek yogurt, but I only got a few bites in. Not a fan; didn’t like the taste. I’m a Chobani girl at heart.

I made my own version of black bean burgers. My burgers contained:
- 1 can of Cuban style black beans
- 1/4 cup of onions
- 1/4 cup of bread crumbs
- 1 teaspoon of cumin
- 1 teaspoon of garlic powder
- sprinkle of minced onion
- dash of salt
- dash of pepper

Not too shabby!

Even though it broke apart halfway through eating, I enjoyed my black bean burger on a wheat bun. Plus my side of roasted potatoes and organic ketchup. Yup, one of the few items in the apartment that’s organic.
Score!
Jared was quite happy with dinner. He even went back for a second helping of potatoes! He said he ate peanut butter and jelly for lunch and snacked on baby carrots, apple slices, and animal crackers throughout the afternoon. Sounds like he did pretty well on Day #2 of my Vegetarian Challenge.

I’m glad you posted about the TJ’s yogurt because I ALMOST bought some the other day but wasn’t sure I would like it as much as Fage or Chobani….I’ll take your word for it!!

Yummy looking burgers! My BF’s mom makes black bean quinoa burgers that are to die for. Such a great meat replacement!

Team Chobani! I’m not even going to dare to try the Yoplait or Dannon. I know they’re going to be nasty. Chobani all the way baby!
Great job on those burgers Melissa! Isn’t it fun to mash all the ingredients together? I use my hands like I’m making meatloaf. I’m a kid in the kitchen I guess. You and Jared are doing so well on this challenge! I thought of another restaurant for you guys called Grasshopper. It’s in Allston. Check it out if you get the chance!
