I had to use my imagination a few times today.  It started when I packed my lunch for work and chose from the random items hanging around in my fridge.

I spread honey mustard on a tortilla, added cheddar cheese and a sliced green apple, and threw it in the toaster oven for a few minutes.  Mmm, the honey mustard was a perfect compliment to the green apple.

I got creative a few hours later when I couldn’t peel my Clementine.  I stabbed it with a pen cap and was then able to pick off the peel.

I was still hungry so I rummaged around in my file cabinet and found the Special K bars I bought last week.  How quickly I forget about the snacks stashed around my office!  I also had a few more pieces of mint chocolate that went unphotographed.

We had a Fit Group meeting at work and I had a lot of things to do so I didn’t take a lunch break.  But I did take a day off from exercising.  Gotta let my tired body recover!

Jared and I ran an errand after work so I didn’t start making dinner until 7:15.  I snacked on Triscuits while boiling pasta.  I tossed the campanelle pasta in flavored olive oil and added halved grape tomatoes and Parmesan cheese.  Simple and tasty.  It hit the spot!

I was still feeling a little bit snacky so I had a small bowl of vanilla ice cream with peanut butter.  This is why I can’t keep frozen delights in the house.  I become obsessed! ;)

I’m waking up at the ungodly hour of 5:15 am so I can meet Patricia at Body Pump at 6 am.  No more blog reading for tonight.  I need to get some Zzzz’s.

    That wrap looks tasty! Our cafe at work makes similar wraps with apple, cheddar, whole grain mustard and cranberry relish. Yum!

    mmmmm ice creamm.. i havent had honey mustard with green apples since i was a kid.. but i used to LOVE it! how funny that you had that combo! thanks for the reminder :)

    You are so creative, I wouldn’t have thought about putting apples in a wrap but apples and cheese are a great combo. I might have to try it out. Hope you got enough sleep – Body Pump at 6am is hardcore!

    Great combination! Apples are great in wraps, but I rarely think of it.

    Apple and honey mustard does seem like a good combo! Not as good as ice cream and PB though ;-)

    That apple wrap looks awesome. Good flavors! I am upset I can’t come on the 6th since I’m having my birthday party at my house that night – boo! I’ll have to live vicariously through pictures. :)

    I would have NEVER of thought of that wrap! Hmm…interesting. I don’t wanna judge, so Im keeping an open mind about it!

    Good luck getting up so early – I have trouble with anything before 6:00 am – and I couldn’t even get up at 6:00 am today!

    Hey girl!! That wrap looks absolutely awesome! What a great bunch of flavor combos you got there. Good luck with your class tomorrow morning. I think the hardest part is just getting to the gym. (Im a morning exerciser too) Once Im there though Im totally fine. I hope you have a blast! Btw..too funny that you decided to stab the orange with the pen cap. ahha. Cracked me up. You gotta do what you gotta do sometimes. Eating at a desk can be hard! I have to do it alot..its tricky! Have a wonderful day!!

    Interesting wrap! I love all those ingredients but have never thought to put them together. I’ll have to give it a try. Also…working out at 6am? You are amazing.
