Buffalo Chicken Calzones

I seriously needed to rehydrate so I made a smoothie with:

  • 4 ice cubes
  • 1 cup of frozen blackberries
  • 1 container of blueberry yogurt
  • 1/2 cup of Mango coconut water

I had trouble getting everything to blend.  4 ice cubes might’ve been too many.  But once everything was finally mixed together, this smoothie tasted great.  It wasn’t very sweet or overly fruity.  I appreciated the light flavor, and the electrolytes from the coconut water.

I was really excited to make Buffalo Chicken Calzones for dinner.

I used a recipe from Lauren’s blog, Healthy Food for Living.  I set my laptop up on the kitchen counter so I could follow the directions exactly as Lauren typed them.

Mmm!  This recipe was SOOOO good.  Jared, Mark, and Maggie all enjoyed it.  I was proud that it turned out so well.

I don’t cook very often for a variety of reasons.  My kitchen is too small, I’m lazy, I’m afraid my recipes won’t turn out well.  But this was a boost of confidence.  I’m going to try to cook 1 new recipe per month.  While this one wasn’t exactly from scratch, I worked hard and I’m already browsing for my next cooking challenge.

    YUM i saw this recipe on lauren’s blog and bookmarked it. yours look like they turned out perfectly! mmmm. smoothie. send me a photo of a smoothie stache next time you have one and i will post it!

    Calzones are just popping up everywhere! The Fitnessista had some on her blog the other day, too. I’m craving one now! Looks so yummy!

    I made homemade pizza tonight – but I seriously debated calzones.

    What a great challenge to try one new recipe a month – the more you cook, the more confidence you will get!

    I have left over gluten free dough from my pizza on Friday and calzones will be next! I love calzones….especially dipped in tomato sauce!

    Those look delicious! And I’m glad they turned out well :) I’m the same way – days I cook are few and far between because of lack of experience of fear of disappointment. Hopefully this boosted your cooking confidence!

    Great job! Christian and I cook together on the weekends instead of spending money on going out. It’s the perfect time to try new recipes and spend time together. You and Jared should do it sometime :)

    Wow both the smoothie and the calzone look fantastic! I love calzones. I’ve been a big pansy when it comes to spice lately though…I need to find a mild buffalo sauce in the store!
