Honey, I’m hoooommmeee!
After a not so exciting afternoon, I made it home for the holidays. I love being in Blackstone and wish I could spend more time at my parents’ house.
It was a quiet and relaxing night at home. I had a few samples of cookies and fudge that my parents brought home from work. Gotta love that both of their jobs include gifts from patients!

My mom made penne and meatballs for dinner. My camera batteries are charging so I only took one food photo via an i-phone.
Tomorrow will be a very busy day filled with shopping, wrapping, and baking. I’m going to feature my mom’s recipe for apple-ana bread. It’s one of her specialties! We’re also going to attempt a family first: eggplant lasagna. If anyone has any tips, please let me know!

this is the veggie lasagna recipe I’m using, but I have seen a recipe on here that usues eggplant strips in place of noodles!

I love that area. I think I already told you this, but I went to Dean and Christian’s dad lives in that area. We make trips there quite often! We should hit up the outlets sometime!
Good luck with your eggplant lasagna. I’ve made this before and it was VERY easy. I don’t know if it’s too simple for Christmas dinner, but it’s tasty
