		<description>I see pumpkin everywhere on the blogs, but here in Portugal it&#039;s just not as big as it is in the US. We have it all the time in soup but that&#039;s pretty much it! Oh, and baked goods sometimes, but not as often. Unless it&#039;s a specialty of a restaurant or whatever.

Also... Cinnamon Raisin Swirl peanut butter? That sounds so good.</description>

I made pumpkin quesadillas by mashing baked pumpkin with some pumpkin pie spice and following this recipe minus the canned pumpkin and chicken (or you can use canned pumpkin if you want to follow the recipe to the T): http://www.facebook.com/note.php?note_id=169525560669

I didn&#039;t cut mine into shapes and I just used whole wheat tortillas that I had in my cabinet. I also omitted the adobe sauce.  You can pretty much adapt it to however you want and use the recipe as a guideline.  Good luck making use of your pumpkins :)</description>
