I bought this jar of Cinnamon Raisin Swirl peanut butter at Whole Foods last night.  It took all of my restraint to wait until this morning to open it.

I spread the Cinnamon Raisin Swirl PB on 2 pieces of whole wheat toast and then added a little bit of pumpkin on the top.

Pumpkins everywhere!  Not just the real versions that never got carved before Halloween, but lots of different forms of the stuff in my cabinets and fridge (butter, yogurt, canned, etc).  Melissa, Heather, and I chit chatted about how we’re getting a little tired of it.  But with Thanksgiving recipes starting to be published everywhere, there’s no way to avoid it.  I’m just going to have to think a bit harder to find new ways to eat pumpkin.

    I am on a major pumpkin kick, but I know come Thanksgiving I am going to be ready for it to be over. I’m just wondering what my next obsession will be haha

    I need to get the Cinnamon Swirl! I made pumpkin quesadillas by mashing baked pumpkin with some pumpkin pie spice and following this recipe minus the canned pumpkin and chicken (or you can use canned pumpkin if you want to follow the recipe to the T): http://www.facebook.com/note.php?note_id=169525560669

    I didn’t cut mine into shapes and I just used whole wheat tortillas that I had in my cabinet. I also omitted the adobe sauce. You can pretty much adapt it to however you want and use the recipe as a guideline. Good luck making use of your pumpkins :)

    I see pumpkin everywhere on the blogs, but here in Portugal it’s just not as big as it is in the US. We have it all the time in soup but that’s pretty much it! Oh, and baked goods sometimes, but not as often. Unless it’s a specialty of a restaurant or whatever.

    Also… Cinnamon Raisin Swirl peanut butter? That sounds so good.

    Does that happen with spaghetti squash too…it seems to only come around at this time of the year so I am eating tons of it. I won’t want to see it again til next fall.

    Ok I am definitely making a trip over there! I will have to stay out of Lululemon because I can’t be trusted in there :-)

    We live in Charlestown but I wish PICCO was our “go to” restaurant! So jealous!
