Guest Post: Jill’s Thanksgiving Cake

I asked my cousin Jill to do a guest post featuring her Thanksgiving dessert.  Jill is the baker in the family.  She prepares some kind of special dessert for every holiday.  I’m always excited to see what she’ll create!  Since I’m not going to be home for Thanksgiving this year, I asked Jill to chronicle her baking for me, and maybe I’ll get some leftovers after Turkey Day.

Jill adapted a recipe from Woman’s World:

Pumpkin- Praline Cake with Maple Frosting

Ingredients:

  • 1 package of yellow cake mix
  • 1 can of pumpkin
  • 3 eggs
  • 1/2 cup of water
  • 1 ½ cups of room-temperature  butter
  • 1 tablespoon of pumpkin pie spice
  • 1 package of confectioners’ sugar
  • 1/3 cup of  maple syrup
  • ½ teaspoon of maple extract
  • Cute candies and sprinkles for decorations…whatever inspires your Thanksgiving spirit!

The Baking Process:

Jill preheated the oven to 350 degrees and coated her bundt pan with cooking spray.  She used a mixer at a low speed to combine the cake mix, pumpkin, eggs, 1/2 cup of water, 1/4 cup of butter, and the pumpkin pie spice  for about 30 seconds.  Then she beat the mixture on high speed for about 2 minutes until it was fluffy.

Jill filled her bundt pan and then baked it for about 35/40 minutes.

Jill let her bundt cake cool for 10 minutes before she transferred the cake from the pan to a rack to let it finish cooling completely.

Jill set her mixer to medium speed and beat the remaining butter until it became fluffy.  She slowly beat in the sugar, maple syrup, and extract.  It took another 2 minutes for the new mixture to become fluffy.

Jill cut her bundt cake in half.

She spread the homemade icing onto the bottom piece before adding the top layer.

Jill then spread the remaining frosting over the entire bundt cake.

Jill used black sprinkles, Indian corn, and what appear to be Candy Corn-esque Hershey Kisses.  (Jill, where did you get those?  I MUST try some ASAP!)

    Wow everyone, it’s Thanksgiving Day! I’m happy with my extra day off, and I am planning to doing something fun that will probably involve a moto trip and seeing something new in McGregor I haven’t seen yet.
