Baked Stuffed Acorn Squash

I ate leftover pasta and tofu for lunch.  It might’ve been tastier 2 days later since the tofu really had time to absorb the flavor of the pasta.

Jared and I went for a walk to Newbury Street.  He really wanted to stop at TeaLuxe for a beverage.

He ordered an iced chai and I had a mango bubble tea.  There were so many tasty sounding hot teas, but the weather in Boston was so nice and warm that I couldn’t do it.

Our next stop on our tour of Newbury Street was at O&Co for olive oil tasting.  We tried 4 different types including one for cooking and another for dipping.

Jared made the final decision.  We brought home the cooking olive oil and a specialty oil that starts off with a buttery taste and then had a grassy finish.

We shopped the afternoon away at several of my favorite stores.  I accomplished more of my Christmas shopping!

I decided to create my own baked stuffed acorn squash recipe.  While the acorn squash halves (along with a little bit of brown sugar and syrup) baked for 30 minutes, I prepped the stuffing.  I cooked brown rice.  I also created a mix of ground turkey, canned pumpkin, minced onion, pumpkin pie spice, and ground pepper.

Life is good:  Wine, water with lemon, the latest J. Crew catalog, and a pen to circle everything on my wish list!

Plus a little extra stuffing.  You know me, I had to add some feta cheese just to give it a bit more flavor.

I am SO proud of myself for creating this dish.  I googled how to bake an acorn squash (plus I had seen comments on Melissa’s blog) and I called my dad for some last minute advice.  It was a total success and it’s given me some kitchen confidence for this week’s meals.

    Awesome! It seriously looks fantastic. I’ve only ever baked my acorn squash, and not added anything. I need to get more creative, clearly.

    Good for you for the early Christmas shopping. Does shopping for yourself count ? haha, that’s what I did today. Oops!

    Oh J.Crew, why do you have to be so darn expensive? I really like that catalog. They’ve kicked the styling up a notch in the past year. Ann Taylor Loft is getting better too. I love them both so…
    Your acorn squash looks yummy. You’re much braver than I am with the preparation. I still have no idea what to stuff it with.
    Perfect day for Newbury St. Tealuxe has so many great flavors. Glad you enjoyed the day :)

    What a great day to be out in Boston. It felt like spring!

    I need to get an acorn squash. That dish looks wonderful! This week for sure. I just have to use up my spaghetti squash first.

    yay for baking the squash!!! great work and it looks AMAZINGGG…

    love newbury, and I heard the weather was phenom since I was away since wed! I was hoping to miss a snow storm and NOW that I am back have amazing weather haha..but I am so happy it was a nice weekend…tea lux is awesome and such a relaxing atmosphere :)

    You get a BIG 10 on your acorn squash. Can’t believe you are so creative. Would you change anything that you did to it or add another ingrediant.
